Saffron Garlic Bread with Burrata Cheese

When I’m in need of an easy, low key dinner that’s super impressive, but literally takes minutes to make, I reach for this Saffron Garlic Bread with Burrata Cheese.
And while this could definitely be served as an appetizer, I find it so filling and satisfying that I’ll often make a dinner of it by adding some chopped up cherry tomatoes to it as well.
You only need 6 ingredients to make this Saffron Garlic Bread with Burrata, and you probably have most of them in your pantry already:
Garlic
Butter
Extra Virgin Olive Oil
Saffron (optional)
Burrata Cheese (also optional)

Why?
We’re sneaking in a couple ingredients that people associate with decadence – saffron and burrata cheese.
I love the little hint of something extra special that a pinch of saffron threads adds to this garlic bread. Plus, I always seem to have a bit of saffron left over in my spice cabinet from a dish I’ve made in the past, like paella or risotto. However, the saffron is totally optional. You can leave it out if you’d like.
It’s also optional to leave out the burrata cheese. However, it’s so creamy and delicious that I highly recommend it! You can find it in the specialty cheese case of your local supermarket, near the mozzarella.
And like I said, I added a handful of chopped cherry tomatoes that I tossed with a bit of olive oil and fresh parsley. Optional as well, but it makes this dish so pretty!


Here’s how this recipe goes down:
2 Tablespoons butter
2 Tablespoons extra-virgin olive oil
4 cloves garlic, minced
Pinch saffron threads
¼ teaspoon kosher salt
1 La Brea Bakery Baguette, cut in half lengthwise
For Serving:
4 ounces burrata cheese
1 cup cherry tomatoes, cut in half
1 Tablespoon fresh parsley, minced
Cooking Instructions:
Heat butter and olive oil in a small saucepan over medium heat until butter is melted.
Add garlic, saffron and salt and cook for 1-2 minutes, until fragrant.
Meanwhile, toast baguette under broiler until golden.
Drizzle toasted bread with garlic-saffron butter.
Serve with burrata, tomatoes and parsley, as desired.
