Oh, there are not many fall recipes that beat this Grilled Apple & Goat Cheese Chicken Sandwich. It’s comprised of incredible flavors and is relatively easy to whip up. I have been purchasing La Brea Bakery bread for years at my local Kroger store. It’s one of my favorite things to select as I always am switching it up; between their loaves, rounds, or baguettes. For this sandwich, I selected the Pane Toscano. It’s the perfect texture and grills to a crisp. Each bite includes a crisp apple, honey roasted chicken, and creamy, blueberry goat cheese. It’s absolutely decadent.

Ingredients for a Grilled Apple & Goat Cheese Sandwich:

    • 2 slices of fresh La Brea Bakery Pane Toscano Round
    • 1 breast of Grilled Chicken (see the notes on the recipe card on how to best prepare grilled chicken)
    • White Vidalia Onion
    • Honeycrisp Apple
    • Fresh spinach
    • Blueberry (or fruit-flavored) Goat Cheese
    • Honey Mustard (substitutions: mayo, pesto, or mashed avocado)
    • Natural honey
    • Olive oil (or cooking spray)

How to make this incredible sandwich:

1. Before we can assemble the completed sandwich, we need to individually prepare each ingredient.

2. Chicken: ideally, fresh grilled chicken breast is the most suitable for this recipe. Whatever your preferred method of cooking chicken is, go with that. Personally, I grill the chicken in a Ninja Foodi Grill for 9-11 minutes (or until internal temperature has reached 165 degrees F) and I season the chicken with salt and paprika. Rotisserie chicken or frozen chicken breasts also work well.

3. Onions: heat the griddle for medium heat and grease with cooking oil / spray. Add slices of white vidalia onion to the skillet and sautee them until they’re caramelized (brown); roughly 6-8 minutes.

4. After the onions are almost done cooking, heat the griddle for 300 degrees F and grease completely. Warming all the ingredients is crucial if we want a completely grilled sandwich. Add slices of apples, chopped goat cheese rings, and diced spinach to the griddle. Lightly grease each side of the bread and place on the griddle as well.

5. After about 2-3 minutes, the ingredients will be warm. Spread honey mustard (or condiment of choice) onto one side of the sandwich. Add the onion and sliced apples on top of mustard.

6. On the other slice of bread, smear blueberry goat cheese evenly. Sprinkle diced spinach on top of the goat cheese.

7. Add the sliced grilled chicken onto the apple/onion/mustard slice of bread. Drizzle desired amount of honey on top.

8. Using a spatula, flip the goat cheese/spinach slice of bread on top of the other, forming an incredibly tasty looking sandwich.

9. Slice in half and enjoy!!
